You will most probably recognise the brand Maille for those delicious little pots of mustard. The brand however also have a range of tasty cornichons. These special little pickled cornichons (gherkins), harvested before reaching maturity for that extra-tart bite make a very unique ingredient in food ... our challenge however was to use them in cocktails.

Our first task was to work out how we were going to use the product. We eventually chose 3 ways including: the pickle juice, cornichon infusions and cornichon puree.
